Creamy Balsamic Chicken with Mushrooms is a one-skillet dish that's deeply satisfying and nourishing. Caramelized onions add sweetness, mushrooms add umami, and balsamic vinegar adds a sweet, slightly tangy flavor. And underneath this wonderfully rich fall sauce awaits a perfectly browned, succulent, boneless chicken breast.
2 lbs boneless, skinless chicken breast
2 Tbsp olive oil
1 tsp kosher salt
1/2 tsp freshly cracked black pepper
2 Tbsp butter
6 oz onion or shallot ( thinly sliced )
8 oz button mushrooms ( sliced 1/4 inch thick )
2 cloves garlic ( minced )
1 c chicken stock
1 c heavy cream
2 Tbsp balsamic vinegar
1 Tbsp thyme ( dried or fresh )
1 c flat-leaf Italian parsley ( roughly chopped )
Salt to taste

Braised Short Ribs in a Dutch Oven are irresistible, fork tender, fall-of-the-bone beefy goodness. And the best thing? Slow cooked short ribs are easy to make.
2.2 lbs beef short ribs, bone-in
2 Tbsp vegetable oil
1 head of garlic ( unpeeled, cut in half lengthwise )
3 medium shallots or onions ( chopped )
3 celery ribs ( chopped )
1 Tbsp tomato paste
1/2 bottle of dry red wine
2 sprigs oregano
2 sprigs rosemary
3 sprigs thyme
2 c beef stock ( or as needed )

Gremolata:
Bunch of flat-leaf Italian parsley ( about 1 c chopped )
2 tsp lemon zest

My neighbor Gary is really good when it comes to grilling and smoking things. I have tasted his chicken, ribs and things and have never been disappointed. Well, recently he did a rotisserie turkey on his pellet grill and it was fantastic! This bird was juicy and flavorful like no other. Outdoor cooking has never been better with all these fresh herbs. 1-2 pie crusts ( 1 for a standard size quiche, 2 if making mini quiches )
1 medium zucchini
1 Tbls vegetable oil
1/2 cup diced shallots
1/4 c all-purpose flour
1/4 tsp Kosher salt

2 1/2 ( 3 cups of two or more kinds of cheese )
1 cup cottage cheese
1 (4 ounce) can chopped green chiles ( drained )

1/4 c all-purpose flour
1/4 tsp Kosher salt
