Grilling vegetables is not about having special equipment. The best vegetables to grill are the ones that are ripe in your garden or fresh at the market.
2 bell peppers ( remove core and seeds, quarter )
1 large red onion ( peel and quarter )
1 medium eggplant ( cut lengthwise in half-inch slices or rounds )
1 medium zucchini ( cut lengthwise in half-inch slices or rounds )
1/2 lb asparagus ( cut off woody ends )
2 medium tomatoes ( cut in half, or a bunch of grape tomatoes, leave whole )
2 large portobello mushrooms ( I like them whole )
1/2 c olive oil ( or more )
Juice from a half lemon or lime
Generous pinch of sea salt and freshly cracked pepper

This cocktail recipe is a great accompaniment with seafood dishes especially fish. It has a number of lovely herbaceous notes. But the flavors are not overpowering and balances well with the delicate flavor of the seafood
4 Sprigs of Thyme
6 Mint leaves
1/2 cup lime juice
1/2 cup Honey
1 bottle white wine

- In a mixing glass or shaker, gently muddle the thyme, mint and the lime juice.
- In a pitcher, mix all the ingredients including the muddled herbs.

I love the combination of curry and coconut milk. When you add the sweet coconut milk with the curry spice it is a wonderful creation. We used chicken but you could also use shrimp or a combination of both. Add some vegetables and you are now in heaven. I could eat this stuff every week and I don’t think I would grow tired of it.
2 T olive oil
1 can chicken, 12.5 oz.
Salt and pepper to taste
1 large potato ( pealed and cubed )
1 large carrot ( pealed and diced )
½ cup onion ( chopped )
1 red bell pepper ( chopped )
2 c chicken broth
1 can ( 14-ounces unsweetened coconut milk )
1 T fish sauce
? tsp. cayenne pepper or more to taste
1 T brown sugar
1-2 T curry powder
1 T fresh lime juice ( about 1 medium lime )
¼ c fresh cilantro
Hot ( cooked rice )

2 soft ( fully ripe avocados, pitted and scooped out )
1 Roma Tomato
Juice of 1 fresh lime
1 Jalapeño, seeds and membranes removed
2 Tbsp. fresh cilantro
1 clove garlic ( minced )
1/4 tsp. cumin
1/4 c. sour cream ( full fat )
1/4 tsp. salt ( or to taste )
1 Tbsp. sugar
1 Roma Tomato
Juice of 1 fresh lime
1 Jalapeño, seeds and membranes removed
2 Tbsp. fresh cilantro
1 clove garlic ( minced )
1/4 tsp. cumin
1/4 c. sour cream ( full fat )
1/4 tsp. salt ( or to taste )
1 Tbsp. sugar

Add all ingredients in a blender or food processor and puree until smooth. Serve as a dip. Add a little bit of milk to thin it out if you want to serve it as a sauce or drizzle.

On Father’s Day, my little sister brought over some ingredients to make what she called “Chipotle’s salsa”. I was of course intrigued and then later delighted when I tasted it.
