Grilled Vegetables

Grilling vegetables is not about having special equipment. The best vegetables to grill are the ones that are ripe in your garden or fresh at the market.

2 bell peppers ( remove core and seeds, quarter )
1 large red onion ( peel and quarter )
1 medium eggplant ( cut lengthwise in half-inch slices or rounds )
1 medium zucchini ( cut lengthwise in half-inch slices or rounds )
1/2 lb asparagus ( cut off woody ends )
2 medium tomatoes ( cut in half, or a bunch of grape tomatoes, leave whole )
2 large portobello mushrooms ( I like them whole )
1/2 c olive oil ( or more )
Juice from a half lemon or lime
Generous pinch of sea salt and freshly cracked pepper

The magical fruit meets bacon and beer. That’s right, today we’re talking drunken beans.  Also known as frijoles borrachos.  Or if I were given the naming rights to this one, which I guess I am, I’d probably go more along the lines of Bacon and Beer Simmered Beans. Whatever you call them, though, these guys …

Chicken Curry Soup

I love the combination of curry and coconut milk. When you add the sweet coconut milk with the curry spice it is a wonderful creation. We used chicken but you could also use shrimp or a combination of both. Add some vegetables and you are now in heaven. I could eat this stuff every week and I don’t think I would grow tired of it.

2 T olive oil
1 can chicken, 12.5 oz.
Salt and pepper to taste
1 large potato ( pealed and cubed )
1 large carrot ( pealed and diced )
½ cup onion ( chopped )
1 red bell pepper ( chopped )
2 c chicken broth
1 can ( 14-ounces unsweetened coconut milk )
1 T fish sauce
? tsp. cayenne pepper or more to taste
1 T brown sugar
1-2 T curry powder
1 T fresh lime juice ( about 1 medium lime )
¼ c fresh cilantro
Hot ( cooked rice )
8
In a large heavy pot heat the oil over medium heat. Add the onions and red pepper. Cook for 2-3 minutes, until the onions and peppers are slightly softened. Add the chicken, broth, potatoes, carrots,...

On Father’s Day, my little sister brought over some ingredients to make what she called “Chipotle’s salsa”. I was of course intrigued and then later delighted when I tasted it. Pico de gallo is such an amazing salsa because you don’t daintily dip your chip. No, you scoop that salsa and enjoy a delicious mouthful of tantalizing fresh flavors that makes you dive right back into the bowl. It takes all of 5 minutes to pull together and you can serve immediately or let is sit in the fridge for a

Double (or triple) this recipe for a crowd.
1 1/2 c Roma tomatoes ( chopped seeds removed )
1/2 c cilantro ( chopped )
2 1/2 Tbls jalapeno pepper ( finely diced leave seeds in if you want spicier salsa )
1/2 red onion ( finely diced )
1/2 Tbls Kosher salt
2 Tbls fresh lime juice

Combine all ingredients and stir. Doesn’t get any easier (or yummier)!
