This delicious lasagna is made healthy with spaghetti squash! Spaghetti Squash Lasagna is a great low carb recipe that still gives you all the flavor of lasagna. It's a hit with the family and leaves you feeling good!

1 small spaghetti squash
1 lb lean ground beef
3 cloves garlic
1/2 yellow onion ( finely diced )
1/2 tsp Italian seasoning
24 oz marinara sauce
3 cups low fat cottage cheese

A hearty Vegetable Lasagna with Zucchini Lattice - layers of ricotta, veggies, marinara sauce, noodles, and mozzarella cheese make the perfect filling vegetarian lasagna!

Marinara Sauce:
1/4 cup flat leaf parsley
1/4 cup fresh basil
2 tsp dried oregano
4 cloves garlic
1 medium onion ( quartered )
1 carrot
1/4 cup olive oil
1 28 oz can San Marzano tomatoes ( crushed )
1 tbsp sugar
2 tsp salt
1 tsp black pepper
1/2 tsp red pepper flakes
Lasagna:
1 cup carrots ( diced )
3 zucchinis ( diced )
2 yellow squash ( diced )
2 cups mushrooms ( diced )
3 cups mozzarella ( shredded )
1 1/4 cups parmesan ( shredded )

You can eat this baked chicken parmesan on its own with a vegetable on the side, serve it over pasta with a salad, or combine those two ideas by serving it on top of spaghetti squash or zucchini noodles!
