It's summertime. It's time to grill. I'm thinking about fruit. Grilling fruits elevates grilling to a whole new level. Endless flavors with endless surprises.

1 1-inch slice of watermelon ( cut into four triangles )
1 1-inch slice of pineapple ( cut into four slices and core removed )
2 apricots ( halved and stone removed )
2 peaches ( halved and stone removed )
1 mango ( cut along stone )
1 lemon ( cut into three slices, optional )
1 lime ( cut into three slices, optional )
Toppings ( ice cream, herbs, honey, feta cheese, etc. )

Pineapple Upside Down Cake Recipe

This pineapple upside down cake recipe is a delectable dessert perfect for an afternoon snack idea that brings back many childhood memories.

You can refrigerate the topping up to 1 day. If refrigerating for longer than 1 hour, cover it tightly with plastic wrap. Just a quick reminder, this is not the best cake to make ahead of time since the pineapples will settle at the bottom of the cake and the presentation won't be pleasing. And make sure all the ingredients for the cake are at room temperature, otherwise, the result will suffer.

Toppings:
1/4 cup unsalted butter
1/2 cup packed dark brown suga
10 slices pineapple
20 maraschino cherries

1 1/2 cup cake flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
6 tbsp unsalted butter
3/4 cup granulated sugar
2 large egg whites
1/3 cup sour cream

Seafood Salad with crab and lobster

If you're looking for a light dish to serve at a party, this is a good one. This would also be great at a summer garden party.

The recipe as written calls for Rosemary and Thyme, but you can substitute other herbs that you like better. Parsley and dill would also be nice in this dish.

3/4 cup orange juice concentrate
1/4 cup white wine vinegar
(1 tbsp) mayonnaise
1/4 cup olive oil
1 sprig fresh thyme
1 sprig fresh rosemary
salt and pepper to taste
1 cup lobster
8 oz small shrimp
12 oz lump crabmeat
1 large grapefruit
1 mango
