Baked Ambrosia
Paleo "Brown Sugar" Cinnamon Pop Tarts are much better than breakfast out of an aluminum wrapper, but you still get that nostalgic feeling! They are gluten free, grain free, and refined sugar free.
Crust:
1 1/4 cup almond flour
1 cup tapioca flour
1 pinch of salt
4 tbsp coconut oil ( solid )
1 egg
2 tbsp maple syrup
Filling:
1/4 cup coconut sugar
1 tsp cinnamon
1 tsp almond flour
1/2 tsp tapioca flour
eggs wash ( 1 egg whisked with 1 tbsp water )
Glaze:
1/2 cup coconut sugar
2 tsp tapioca flour
1 tbsp almond milk
1 1/4 cup almond flour
1 cup tapioca flour
1 pinch of salt
4 tbsp coconut oil ( solid )
1 egg
2 tbsp maple syrup
Filling:
1/4 cup coconut sugar
1 tsp cinnamon
1 tsp almond flour
1/2 tsp tapioca flour
eggs wash ( 1 egg whisked with 1 tbsp water )
Glaze:
1/2 cup coconut sugar
2 tsp tapioca flour
1 tbsp almond milk

Healthy, gluten free Paleo Chocolate Covered Strawberry Pop Tarts made with a fresh strawberry filling. This healthy make-ahead breakfast, snack or dessert is easy to make, and perfect for using up your summer strawberries! (gluten free, grain free, refined sugar free)
1 1/2 cup almond flour
1 cup tapioca starch
pinch of salt
4 tbsp coconut oil, solid ( or grass-fed butter cut into cubes )
1 egg
2 tbsp maple syrup
Filling:
1 lb strawberries ( sliced )
2 tsp lemon juice
1/4 cup maple syrup
Topping:
4 oz dark chocolate
freeze dried strawberries ( optional )
1 cup tapioca starch
pinch of salt
4 tbsp coconut oil, solid ( or grass-fed butter cut into cubes )
1 egg
2 tbsp maple syrup
Filling:
1 lb strawberries ( sliced )
