Like I’ve said before I get bored with my lunches at home. Sometimes I get a craving for something and try to make it with what leftovers I have on hand. That is how I came up with this recipe. I love Mexican food of any kind and these are so yummy and simple to make. I had leftover roasted chicken this time around, but these could be made with beans and beef, or even shredded pork.

Preheat oven to 400 degrees. Grease a cookie sheet, or use a cast iron pan.
Place shredded meat, cheese and salsa on tortilla. Roll up tightly (but be careful not to rip the tortilla)
