Quick sauteed carrots with a light compound butter
4
4 cups sliced carrots or baby carrots
1 cup water
3/4 tsp. kosher salt
2 tbsp. light butter, softened
1 tbsp. chopped tarragon
1 tbsp. minced shallot
1 garlic clove, minced
1 cup water

In a small bowl, mix together the butter, tarragon, shallot and garlic. Place butter into the middle of a piece of plastic wrap and roll into a log. Place in the refrigerator.
