Tasty Sweet Potato Pancakes

These healthy sweet potato pancakes are so tasty and really easy to make. You can make them using only 2 ingredients (I’ve added a tablespoon of almond butter to mine – but this is optional, I’ve had the pancakes without this aswell and they still taste delicious). They make the perfect healthy breakfast or dessert. Hope you enjoy

1 large sweet potato
2 eggs
1 tbsp. almond butter (optional)
