Tasty Taco Soup

My family can\\\'t seem to get enough Mexican food in our house. Although eating tacos every night doesn\\\'t seem such a bad idea, it\\\'s nice to switch things up. Sometimes we make Mexican casseroles, sometimes a soup. It\\\'s simple and very tasty! Try scooping it up with tortilla chips or crushing some and sprinkling it on top for a little crunch. So delicious!

1 pound of Ground Beef
1 (14.5 oz) can of Mexican Style Stewed Tomatoes
1 (15.5 oz) can of Light Red Kidney Beans
2-1/2 Tablespoons (or one envelope) of Taco Seasoning
1/2 cup of water
4 Tablespoons of Mexican Cheddar Jack cheese
4 Tablespoons of Sour Cream, optional
In a pot, brown the ground beef and drain fat. Add tomatoes, kidney beans, taco seasoning, and water. Bring to a boil. Cover, lower heat to medium-low and continue boiling for 10-15 minutes, stirring...
