My husband is a huge fan of Dr. Seuss. Sometimes he will tell somebody the he loves them more than he loves Dr. Seuss (like his friends or his siblings…especially if he wants something ;) ) But it usually is quite sincere! Ingredients:
4 Tbs. butter
2 carrots, shredded
2 tsp. curry powder
1/4 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. chili powder
1/4 tsp. paprika
1/4 tsp. salt
1 can (14 oz.) chicken broth
1/2 cup fresh chopped cilantro
1 can (15 oz.) unsweetened coconut milk
1-1/2 lb. boneless, skinless chicken breasts (about 4 chicken breasts) cooked and shredded
1 cup cooked rice
Juice of one lime
1 Tbs. soy sauce
4 Tbs. butter
2 carrots, shredded
2 tsp. curry powder
1/4 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. chili powder
1/4 tsp. paprika
1/4 tsp. salt
