In cookery school of Chiang Mai, Thailand, the chef teacher recommends that ginger goes perfectly with chicken. For this dish, the most suitable ginger is a young one with a pink root. It is interesting that the ginger as a spice, usually not even the major one, plays a major role in this dish!

2 oz. ginger
1 onion (small)
2 oz. spring onion
2 red chili peppers (large)
1/4 oz. garlic
2 T. fish sauce
3 T. oyster sauce
2 T. soy sauce (light)
3 T. vegetable oil

Thinly slice the chicken breast. Slice the garlic, onion and chili peppers. Finely shred the ginger. Chop the spring onion into 1? pieces.
