A classic chewy peanut butter cookie that is slightly crispy on the outside and chewy on the inside. They are so good they will make you go bonkers!

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup creamy peanut butter
1 large egg
1 tsp vanilla
1 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
