The Best Chewy Peanut Butter Cookies

I don\\\'t normally eat peanut butter but I couldn\\\'t put down these cookies. They were amazing and chewy.

2 1/4 cup all purpose flour
2 tsp baking soda
1/2 tsp salt
1 cup unsalted butter (softened)
1 cup sugar
1 cup light/golden brown sugar (packed)
1 cup peanut butter (I prefer jiffy)
2 eggs
2 tsp vanilla
additional sugar for rolling cookie balls (about 1/2 cup)
