The Unconventional Taco

The Unconventional Taco has layers of flavor that perfectly complement each other. Pork Carnitas, Pico de gallo, creamy queso fresco, avocados, crema and handmade tortillas.

1 slow cooker recipe Pork Carnitas by Melissa d’Arabian-allow 7 hours 15 mins
1 can black beans, drained, rinsed, heated and then smashed slightly with a fork
2 cups shredded iceberg lettuce
1 avocado, sliced
1 cup crumbled queso fresco cheese
Pico de Gallo:
4 plum tomatoes, seeded and finely chopped
3 cloves garlic, minced
1 medium white onion, finely diced
1 lime, juiced
½ cup cilantro leaf, rinsed and chopped
1 red bed pepper, stemmed and diced
2 cherry peppers, seeded and minced
2 jalapeno peppers, seeded and finely chopped
½ teaspoon salt
½ teaspoon pepper
Crema:
½ cup sour cream
½ cup half and half
1 lime, juiced
½ teaspoon harissa spice
Corn Masa tortilla boats:
2 cups instant corn masa flour (I used Maseca Maseca)
1 ½ cups water
2 tablespoons oil for frying
