These ooey chewy cookie bars are packed with my favorite girl scout cookies ever: THIN MINTS!!

INGREDIENTS:

Crust:

4 tablespoons unsalted butter, melted (1/2 stick)

1 sleeve of Thin Mint cookies, about 1 cup ground

Blondie Cookie Layer:

1/2 cup unsalted butter (1 stick), melted

1 large egg

1 cup light brown sugar, packed

1 tablespoon vanilla extract

1 cup all-purpose flour

1 sleeve of Thin Mints, crushed (not super fine crumbs as with the crust)

about 1/2 cup chocolate chips
