Thyme for Steak Hot Chopped

This Chopped is an excellent way to chop the cost and calories from a "meat lovers" meal. Also, a terrific way to use up a small amount of leftover steak. Add some creamy Morbier or Cambozola Cheese and you'll be totally satisfied.

Bowl Ingredients:
2 cups Arugula, Chopped
1 cup Chopped Green Beans, Roasted or Microwave Steamed.
10 Grape Tomatoes, sliced
4 Green Olives, Queen sized, sliced and halved
3 Green Onions, Chopped
6 Basil Leaves, Chopped
2 oz. Morbier Cheese, grated or Cambozola, crumbled

Dressing Ingredients:
1 Tablespoon Olive Oil
2 Garlic Cloves, finely Chopped
1/2 teaspoon Honey
Juice of 1 Lemon
1 teaspoon Dijon Mustard
2 teaspoons Chopped Fresh Thyme or 1 teaspoon Dried
Kosher Salt to taste
Freshly Ground Black Pepper to taste

Bowl/Pan Ingredients:
8 oz. Grilled Steak, Chopped
1 Cup Cooked Brown Rice or grain of your choice. Quinoa or Barley are my other “go to” choices.
6 Artichoke Hearts in water or frozen/defrosted, Chopped

Zing Factor:
2 Slices Grilled Onions
1 cup Chopped Kale
