Thyme Roasted Pork Tenderloin with Garam Masala Cider Sauce

This healthy, 21 Day Fix approved pork tenderloin is roasted with thyme and garlic and covered in a delicious, sweet-savory apple cider sauce. The PERFECT thing to do with the fresh apple cider you brought home from the farm!

Thyme-Roasted Pork Tenderloin
1 pork tenderloin, trimmed (about 1 1/2 lbs)
salt and pepper, to season
1/2 Tbs fresh thyme leaves (chop if you like)
2 small cloves of garlic, minced
Garam Masala - Cider Sauce
4 tsp grassfed butter
1 cup shallots, coarsely chopped
1/2 tsp fresh thyme leaves (again, chop if you like)
4 tsp whole wheat pastry flour (or regular whole wheat flour)
1 tsp garam masala spice mix
1/8 tsp salt
1/2 cup low-sodium, fat free beef broth
1 1/2 cups apple cider
