Tilapia with Roasted Garlic Butter
Tilapia fillets, sautéed, then topped with a roasted garlic compound butter.

1 garlic bulb
3 tablespoons salted butter, softened
4 tilapia fillets
Olive oil
Salt and pepper
Lemon wedges for garnish

Slice top 1/4" of garlic bulb off and discard. Place bulb on piece of foil, drizzle 1 teaspoon of olive oil on top, sprinkle lightly with salt and pepper. Enclose in foil (like a big chocolate kiss) and bake at 350* for 45 minutes or until softened. Cool slightly. Remove papery outer shell. Smash garlic with the softened butter. Place on plastic wrap and roll up. Place in refrigerator to chill.
Season fish with olive oil, salt and pepper. Sauté just until cooked through, about 3-5 minutes per side.
Remove chilled butter and cut into "coins". Place coins on top of fish. Serve with lemon wedges.
I serve this with fresh green beans and pasta or rice.
