Toasted Coconut Cream Cupcakes

Incredibly moist and delectable coconutty cupcakes that EVERYONE loves! My favorite cupcake recipe to date.

for the cake:
1/2 cup butter, softened
1 cup sugar
1 egg
1 egg white
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup canned full fat coconut milk
1 cup shredded coconut

for the frosting:
1/2 cup butter, softened
1/2 teaspoon vanilla
1/2 teaspoon almond extract
3 cups powdered sugar
4 tablespoons canned coconut milk
