Tomato & Basil Soup Healthy Tasty Lunch on a Cold Day!

2 tbsp Extra Virgin Olive Oil
1 Onion (chopped)
1 Garlic Clove (chopped)
1 tbsp Tomato Purée
900g Tomatoes
600ml of Vegetable Stock
Small Handfull of Basil
Salt & Pepper to season
1. Heat the extra Virgin olive oil in a saucepan over a medium heat. 2. Add the chopped onion, chopped garlic & cook for 5 minutes until the onion is softened. 3. Add the tomato purée, chopped tomatoes & basil leaves. 4. Pour in the vegetable stock and bring to the boil. 5. Remove from heat and pour into blender/food processor to blend until smooth. 6. Season with salt & pepper & serve with some chopped basil leaves.
