Tomato Rice

2 cups rice
4 cups water
4 large ripe tomatoes cut into cubes
2 tbsps sunflower cooking oil
1 large onion chopped fine
1 carrot chopped fine
Salt to taste
1. Heat the oil in a deep pan and add the onion and the carrot, fry till soft. 2. Add the tomato and mix well. Cook till the tomatoes turn pulpy. 3. Add salt to taste and mix well. 4. Add the water and when is boiling add the rice. Cook for 10 minutes.
