Tuna Quiche//Sweet Potato Crust

Using sweet potatoes to make your quiche crust will add a burst of color and a few extra nutrients to your next meal. And tuna in a quiche with a few roasted bell peppers for good measure? It's a budget-friendly, family-friendly meal that is perfect for light weekday dish.

Sweet potato crust
2 cups AP flour
½ teaspoon salt
3 tablespoons oil
1 teaspoon baking powder
1 ½ cups mashed sweet potatoes (2 medium sweet potatoes)
2 tablespoons cold water (as needed)
Quiche filling:
7-8 eggs (I used 7)
Splash of milk or soup spoon of crème fraiche
1 teaspoon salt
1 can tuna, drained
2 Tablespoons Dijon mustard
1 red pepper, sliced//2 Tablespoons oil
4-5 black olives, pitted and cut into smallish pieces
parchment paper
