Layer up your leftover chicken or turkey to make this quick and healthy salad in a jar.

Roasted Sweet Potatoes
1 small sweet potato cut into 1/2-inch cubes
2 tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper

2 tbsp. balsamic vineger a good, aged vinegar
3 tbsp. olive oil
2 t. honey
1 red bell pepper cut into 1-inch strips
1 cup roasted sweet potato cubes from above
1/4 cup goat or feta cheese
4-6 oz. leftover turkey or chicken cooked
1/2 cup quinoa, rice, or other grain
1/4 cup dried cranberries
1/4 cup pecans pieces
mixed greens, spinach or kale

For the Roasted Sweet Potatoes:
Preheat oven to 400 degrees.
