Turtles Cupcakes

Chocolate cupcakes with gooey caramel in the center, topped with chocolate buttercream frosting, caramel drizzle, and toasted pecans.

1 C all purpose flour
1 C granulated (white) sugar
¼ C + 2 TBS unsweetened cocoa powder
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 large egg (room temperature)
¼ C + 2 TBS vegetable (or canola) oil
½ C milk
1 tsp vanilla extract
1 C boiling water
2 tsp instant espresso powder (or 1 TBS instant coffee granules)
20 baking caramels (I like Kraft)
2 TBS heavy cream
½ C unsalted butter, softened
3 TBS heavy cream
1 tsp vanilla extract
2-1/2 C icing sugar (powdered sugar)
½ C unsweetened cocoa powder
about 2 TBS caramel sauce (I use caramel sundae sauce)
1/2 C pecans, chopped & toasted
