With just a few ingredients and a delicious spice mix, you can make a quick and tasty weeknight #meatfree meal. Tuscan Pasta Toss is delicious, hearty, healthy and can be easily whipped up for a delicious main or scrumptious lunch.

1/2 cup juliened, sun-dried tomatoes
1 cup boiling water
8 ounces uncooked penne pasta
1/2 cup diced red onion
3 cloves garlic, minced
1 cup diced zucchini
1 cup diced red pepper
1 cup halved cherry tomatoes
1 tablespoon Tuscan Spice Mix
1 cup quartered artichoke hearts, drained
3.5 ounces crumbled, fat free feta cheese
Reconstitute the sun-dried tomatoes by soaking in the boiling water for 20 to 30 minutes or until soft enough to roughly chop. Set aside. Cook pasta according to package directions omitting salt and fat....

Marinated Taro Root

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
