A Creamless Healthy and Quick Homemade Tomato Soup. Yummy, quick and easy homemade tomato soup given a Valentine's twist .

1/4 cup extra virgin olive oil
1 medium onion (minced)
3 garlic cloves (minced)
1 pinch red pepper flakes
1 bay leaf
2 (28 oz.) cans whole peeled tomatoes
1 TBSP brown sugar
3 slices soft whole grain wheat bread (crust removed, torn into 1-inch pieces)
2 cups low sodium chicken broth
Salt & Pepper
Small amount light sour cream in ziploc bag with one corner cut off
