These vegan pancakes really do deliver! We have tried lots of different pancake recipes but none of them have ever turned out as good as these. These are great vegan pancakes to make for someone who thinks that eggs need to be in everything. The consistency is perfect, not too thick and not too thin. I love the crispy edges! The flax eggs are undetectable even to my super picky eater son. Sometimes we double the recipe and put the leftovers in the fridge for the night. They are just as good heat

1 flax egg
