A fun kid-friendly meal made healthy - nachos with vegetables and beans

6 oz. baked tortilla chips like Xochitl
1 ½ cups sliced onions
1 red pepper, sliced
1 cup black beans
¼ cup minced onions
¼ cup minced poblano pepper
1 tsp. olive oil
2 tsp. ground cumin, divided
½ tsp. ancho chili powder, divided
1 tsp. Mexican oregano
1 tsp. Kosher salt, divided
2 ears of corn on the cob, grilled for about 10 minutes then remove kernels*
½ cup Roasted Guajillo pepper salsa or your favorite brand, divided
1/2 avocado
½ cup 0% fat Greek yogurt
4 oz. Cabot 75% cheese, grated
