A yummy vegetarian quiche with black olives, roasted red pepper, mushrooms, spinach and courgettes

For the pastry:

250 gr plain flour
125 gr butter
1 egg yolk
40 ml cold water
For the filling:

300 ml sour cream
2 eggs
1 spring onion
a handful of black olives
1 roasted red pepper
1/2 courgettes
5 small mushrooms
a handful of spinach
grated cheese to taste
salt and pepper to taste
