Vegetarian quiche
A yummy vegetarian quiche with black olives, roasted red pepper, mushrooms, spinach and courgettes
For the pastry:
250 gr plain flour
125 gr butter
1 egg yolk
40 ml cold water
For the filling:
300 ml sour cream
2 eggs
1 spring onion
a handful of black olives
1 roasted red pepper
1/2 courgettes
5 small mushrooms
a handful of spinach
grated cheese to taste
salt and pepper to taste

For the pastry you must use cold butter straight from the fridge. Sift the flour and cut the butter in small cubes, then rub it in with your fingertips until the mixture resembles breadcrumbs.
