2 large bell peppers, any color
1 package of Taco seasoning (or two heaping tablespoons of Chili Powder)
1 cup salsa
1 can chopped green chiles
1/2 cup frozen corn
1 cup cooked rice (I used brown)
2 cups Cheddar cheese
Extra Virgin Olive Oil (EVOO)
Salt and Pepper (S&P)
