Veggie and Feta Quinoa

Quinoa is cooked like rice and can be used in a variety of dishes from a simple side or pair it with veggies to create a full meal. This recipe was created for two adults and 1 child and we had plenty leftover.

Ingredients:
1 tbsp olive oil
1/2 chopped red onion
1 bag frozen vegetables
1 cup of cooked Quinoa (follow instructions on package)
2 - 3 cups of fresh spinach
1/2 cup of pesto
Feta Cheese
