This is a great side dish that looks fancy but is super easy! A nice way to use up leftover veggies in your fridge.

1 onion, diced
1 small zucchini, diced
2 carrots, diced
1 pepper, diced
1 leek, whites only, sliced

2 cups mushrooms, sliced
2 cloves garlic, minced
