Veggie & Hummus Wrap

2 medium whole wheat tortilla
4 tablespoons hummus (I used roasted red pepper hummus)
2 handfuls (about 3 cups) fresh spinach
1 cup chopped cucumber or 1 baby English cucumber, sliced
4-5 tablespoons chopped roasted red pepper
4 tablespoons crumbled feta cheese
2 tablespoon sunflower seeds
2 tablespoon vinegar and oil salad dressing
Spread the hummus on the tortilla. Layer the remaining ingredients, drizzling with the dressing last. Wrap and eat immediately. Nutritional Information: Calories: 350 Fat: 22 Carbs: 30 Fiber: 6 Protein: 11

3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
