Veggie Pot Pie Cupcakes

Simple, individual vegetarian pot pie "cupcakes" made with Pillsbury biscuits.

2 cans Pillsbury Grands biscuits (I used Homestyle & Southern)
1/4 onion, diced
1 zucchini, diced
1 yellow squash, diced
6 baby carrots, chopped
2 handfuls of frozen green beans
1 can cream of onion soup
1/4 cup shredded cheese (I used a Colby Jack blend)
1 tsp salt
1 tsp freshly ground black pepper
1 tsp garlic pepper
extra virgin olive oil
