1 poblano pepper, diced

1 c. canned black beans
½ c. cooked quinoa
¼ c. chopped cilantro
1 c. panko
4 buns
Oil for buns, if needed
4 leaves lettuce (optional)
4 slices tomato (optional)
1 c. guacamole (optional)
