4 tbsp butter
1/3 cup all-purpose flour
1 cup heavy cream
1 1/2 cups milk
8 oz extra sharp white Vermont cheddar, shredded
2 tsp Dijon mustard
1 tsp Kosher salt
1/8 tsp cayenne (or a dash more)
