Delicious, yet packed with good-for-you veggies, this quick and easy frittata can be served for breakfast, lunch, or dinner!

6 Large eggs
2 Tablespoons milk
2 Tablespoons plain greek yogurt
½ Cup cauliflower puree
Salt & Pepper to taste
¼ - ½ Teaspoon garlic powder
1 Cup chopped fresh spinach
1 Cup chopped bell peppers
2 Tablespoons parmesan cheese
½ Cup mozzarella cheese
tomatoes, green onions, & salsa for garnish
2 Tablespoons milk
2 Tablespoons plain greek yogurt
½ Cup cauliflower puree
Salt & Pepper to taste

1 Cup chopped bell peppers
2 Tablespoons parmesan cheese
½ Cup mozzarella cheese
tomatoes, green onions, & salsa for garnish
Preheat oven to 375°F. Lightly coat a 9-inch pie plate with cooking spray & set it aside. Whisk together eggs, milk, yogurt, puree, & seasonings. Stir vegetables into egg mixture and pour into the pie plate. Sprinkle cheeses on the top. Cook for 25-30 minutes or until set. Top with tomatoes, green onion, and salsa.
