Vietnamese Chicken Salad

Refreshing and colorful and full of crisp vegetables.

Vietnamese Chicken Salad

2 pounds boneless, skinless chicken breasts
3 tablespoons fresh lime juice
3 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon granulated sugar
2 serrano chiles, finely chopped
3 cloves garlic, finely minced
1 red onion, very thinly sliced
2 cups Napa cabbage, shredded
2/3 cup cilantro (or Thai basil or mint if you prefer. Or a combination!) chopped
