Wacky Chocolate Cake

A simple chocolate cake that I love to make with my 6 year old. She can do most of the recipe herself and feels so proud serving it for dessert. This cake doesn't have any eggs or milk, so it's perfect for those with food allergies. You mix it right in the pan you bake it in. Can't get any easier than this!

1 1/2 cups flour
3 Tbsp. baking cocoa
1 Cup white sugar
1 tsp. baking soda
1/2 tsp. salt
1 tsp. white vinegar
1 tsp. pure vanilla extract
5 Tbsp. canola oil
1 Cup water
Heat oven to 350. Mix flour, cocoa, sugar, baking soda, and salt in a greased 8x8 pan. Make three holes in the dry ingredients. Two can be the same size and one larger hole. Pour vanilla in one of the smaller holes, white vinegar in the second smaller hole, and oil in the larger of the three holes. Pour water over everything and mix. Bake for 35 minutes or until toothpick comes clean when inserted in the middle. I use regular canned icing to top mine, but you can use whatever icing you usually use or even just a sprinkle of powdered sugar.
