Waffle Iron Hashbrowns with Ham

Breakfast in crispy, cheesy, meaty "waffle"!

1 bag frozen shredded hashbrowns, thawed
1 cup grated cheddar cheese (or your favorite shredded cheese)
1/2 cup finely diced onion
1/2-3/4 cup finely chopped ham (or bacon)
salt and pepper to taste
Spray a hot waffle iron GENEROUSLY with nonstick cooking spray. Mix hashbrowns, cheese, onion, ham, salt and pepper in a bowl. Mound about a cup of the hash brown mixture onto the waffle griddle. Press down firmly and hold until the potatoes settle into the cracks. Cook until the hashbrowns are brown and crispy. Re-spray with nonstick cooking spray between every batch. Serve with eggs, ketchup, fruit...whatever you enjoy for breakfast!
