Walnut, Parsley, & Parmesan Linguini

If last year was my “summer of the basil,” then this summer was my “summer of the parsley.” Seriously, this thing has been cut back severely, several times since it was trying to take over my entire herb garden. My dill feared for its life & my thyme barely made an appearance, probably because this big, fat, juicy parsley plant was stealing the show. My two basil plants were “meh” at best this year (I only have one small batch of pesto in the freezer!), but my sage plant also did fairly well

8 ounces linguine
1/2 cup of walnuts
1 clove garlic
1 cup parsley leaves (plus extra for garnish)
1/3 cup grated parmesan (plus extra for garnish)
4 tablespoons olive oil
1/4 cup reserved cooking liquid from pasta
Salt & pepper
