White Bean and Basil Tuna Melt Sandwiches

White Bean and Basil Tuna Melt Sandwiches are great for lunch or dinner. The bread is crispy, the tuna-bean mixture is creamy, and the basil adds a delicious punch of freshness. The next time you're craving a cheesy tuna melt sandwich, this is the recipe for you!

1 can can of white beans ( 15 oz rinsed and drained )
Juice from 1 lemon
2 cans (4 oz) canned tuna ( 4 oz )
1-2 tablespoons capers ( whole )
2-3 garlic cloves ( diced )
1 celery stalk ( diced )
2 teaspoons chili paste ( I used Sambal Oelek )
1 Green onion ( dice both the white and green part )
10 basil leaves ( ripped into small pieces )
1/4-1/2 cup mayo
to taste salt and pepper
6 slices of your favorite bread ( I used an Italian loaf )
6 slices sharp cheddar cheese
Green onion and/or chives ( garnish )
