Whole Wheat Fresh Cranberry Muffins

Whole wheat muffins that are tender and moist, but still whole wheat and dairy free and chock full of fresh cranberries!

1/4 cup coconut oil
1/2 cup applesauce
3/4 cup soy milk
1 teaspoon vanilla
2 eggs
1 cup sugar
2 cups whole wheat flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1-3/4 cup cranberries + 1/4 for topping (I used fresh cranberries, but frozen works well, too!)
