Whole Wheat Quinoa Rolls

So I just recently jumped on the quinoa train. Although I'm still getting used to the texture, I really like it! It can stretch a long way for meals (like rice & pasta) but it's so much healthier! Another great thing about it is that it's sooo versatile. I decided to try my hand out with quinoa in whole wheat dinner rolls. They did not disappoint! I will forewarn you that this, like all homemade breads, is time-intensive. But if you're up to it, you're going to love

1 cup quinoa
2 cups water
1 & 2 teaspoons salt, divided
1.5 Tablespoons active dried yeast
1 cup warm water
1/2 Cup & 1 Tablespoon honey, divided
1 cup vegetable oil
2 egg whites
2 cups whole wheat flour
4 cups bread flour
