Working Girl's Favorite Salad

Spinach, Berries, Rotisserie Chicken and Candied Nuts lightly dressed in a sweet honey dressing. Easy to pack ahead and transport to work. By layering the ingredients in a wide-mouth mason jar you keep your greens crisp and fresh. Your lunch will be the envy of all your co-workers. Nutritious and B-E-A-UUUUUU-tiful. It works great as an entree salad, but you could just as easily pack it in a jar as a side salad when you are taking someone dinner.

2 TBS Angie's Honey Dressing
3 oz Cooked Chicken (I used leftover Rotisserie Chicken)
1/2 C Berries (Can be frozen, fresh, or a mix - in the photo I did fresh strawberries and frozen mixed berries)
2 Cups Spinach
1/8 C Candied Nuts, chopped (I use the Spiced-Candy Nuts recipe linked with this one)
In a wide mouth mason jar (a wide mouth jar makes it simpler to put ingredients in and also to dump the salad out) layer the dressing, chicken, berries, spinach and nuts (I also sometime pack my nuts separate in a small bag). When you are ready to eat dump out the salad on your plate. You can pre-pack this salad in a jar up to 2-3 days in advance. I have pre-packed several salads all at once to use throughout the week. This makes them easy to grab on your way out the door.
