Zesty Mexican Rice & Sausage Casserole

A delicious, easy one skillet meal!

1 lb. bulk italian pork sausage
1 box Mexican style Rice-A-Roni
2 Tbsp. butter
2 cups water
1 can mexi-corn, drained
1 can diced tomatoes with sweet onions
In a large skillet over medium-high heat, brown & crumble sausage til cooked through. Drain & set aside. In same skillet, fix Rice-A-Roni according to pkg. directions Except cut water down to 2 cups. When there is about 3 minutes of cooking time left, add in drained mexi-corn & diced tomates with sweet onions (with all the juice). Mix in cooked sausage & continue heating for a few more minutes, until hot through. NOTE: This can easily be doubled to feed a crowd, just remember to cut water down to 2 cups per pkg. of Rice-A-Roni.
