This Zucchini and Corn Quiche is easy to make, perfect for breakfast or dinner, and can be made ahead of time to satisfy any vegetarian urge!

4 eggs
1 cup coconut milk
1/4 tsp pepper
1/2 tsp salt
1/4 tsp smoked paprika
1 zucchini, thinly sliced (I used a mandolin)
1 shallot, thinly sliced (I used a mandolin)
1 cup sweet corn
1 cup cheese of choice (parmesan, gouda, or goat cheese would be great with this)

1 cup coconut milk
1/4 tsp pepper
1/2 tsp salt
1/4 tsp smoked paprika
1 zucchini, thinly sliced (I used a mandolin)
1 shallot, thinly sliced (I used a mandolin)
1 cup sweet corn
1 cup cheese of choice (parmesan, gouda, or goat cheese would be great with this)
Pre-heat oven to 375
Whisk eggs, coconut milk, salt, pepper, and smoked paprika together
Line pastry crust with shallot, zucchini, corn, and cheese
Top with egg mixture
