Zucchini blueberry pancakes

Great idea for healthy and delicious breakfast! Zucchini blueberry pancakes with a pinch of cinnamon will make every morning perfect!

- 1/2 cup wholemeal flour
- 1/3 cup buttermilk
- 1 egg
- 2 oz blueberries
- 4oz grated zucchini
- 1/2 teaspoon of baking powder
- 1/3 teaspoon of sodium bicarbonate
- 1 tablespoon of maple syrup
- 1/2 teaspoon of cinnamon
- 1/3 teaspoon of vanilla extract
- 1 teaspoon of butter
Squeeze excess water from grated zucchini. In a mixing bowl combine flour, sodium bicarbonate, baking powder and cinnamon. Then add buttermilk, egg, vanilla extract and maple syrup and mix together. Next...
