This super-easy recipe for fresh Zucchini makes a perfect summer side dish with any meal!

2 tbl. butter
1 tbl. olive oil
½ large onion, cut in half then into ¼” strips
2 large Cubanelle-type pepper (or 4 Banana peppers), cut in half and sliced into ¼” strips
2 cloves garlic, minced
3 medium Zucchini squash
sea salt to taste
ground black pepper to taste
pinch of Paprika
3 medium plum tomatoes, seeded & quartered
2 tbl. sherry
1 tbl. water
2 tbl. Parmesan cheese, grated
