I'm sure you've seen the many recipes for zucchini boats or stuffed zucchini. This recipe is along those same lines, but it is just like a taco... in a zucchini instead of a taco shell. They are easy to make and helps you get in those extra veggies!

4 zucchinis
1/2 pound ground beef
1 jalapeno, diced
3 TBS taco seasoning
1 TBS garlic powder
1 tomato, diced
1 cup salsa (I used the fresh restaurant style salsa)
1/2 cup shredded Mexican blend cheese
